Many carrots are harvested in mid-June so be sure to look at your local grocery store around that time for the freshest carrots. Not only are carrots crunchy and tasty, but carrots are also full of vitamins and minerals such as fiber, potassium, and antioxidants.
Radishes are more flavorful and tender when they are small. Consider picking up some small radishes for a radish salad during your next trip to the grocery store. Radishes are full of vitamins such as E, A, and C and are heart-healthy.
Squash is a versatile vegetable that can easily be baked, roasted, or sautéed. During the summer, many stores stock up on a variety of including round zucchini, yellow squash or yellow zucchini. Squash contains vitamin C as well as beta-carotene, folate, and fiber -- making the vegetable good for the heart and body!
